Q. Do you have any info on taking vinegar tablets or liquid to reduce blood sugar?
A. I recently attended a nutrition conference and this very topic was discussed.
Carol Johnston, PhD, RD at Arizona State University has researched and published several papers on vinegar and blood sugar. She found that taking a few tablespoons of
vinegar each day can help to reduce post-prandial (2 hours after eating) blood sugar and A1c levels for those with type 2 diabetes.
Acetic acid is the component of vinegar that seems to help with this blood sugar lowering effect by inhibiting digestion of carbohydrate. According to Dr. Johnston,
vinegar pills are not effective and should be avoided.
Red wine vinegar, balsamic vinegar, and cider vinegar contain very little calorie & carbohydrate and are considered "free foods" by
the American Diabetes Association. You might try having balsamic vinegar and a little olive oil on your
salad instead of your regular dressing at dinner and see if you have any changes in blood sugar after eating.
